From Prep Cook to Executive Chef

What began as a humble role as a prep cook quickly transformed into a lifelong calling, but for Tanmoy, food has always been personal. Inspired by his mother, who had the gift of creating connection through her home-cooked food, our chef developed a love for turning simple ingredients into extraordinary dishes. Over the years, he honed his craft in both classic and contemporary cuisines, building a style that is globally inspired yet firmly rooted in local traditions.

That spark, lit during his childhood in India, still fuels him today. Now, as Executive Chef at O2 Beach Club & Spa, he leads with a passion for seasonal, ingredient-driven cuisine. “Every dish should tell a story,” he explains. “Freshness, balance, and sustainability are at the heart of what we do.”

Away from the stove, Chef Tanmoy’s heart belongs to his family. Time with his daughter is a cherished counterbalance to the intensity of the kitchen. And while he might dream of his mother’s comforting fish curry and rice at home, he also has a sweet tooth that makes desserts his ultimate comfort food.

Of course, inspiration alone doesn’t shape a chef. Along the way, he worked under great mentors, including Chef Kedar Bobde from Mumbai, and Chef Anirban Dasgupta from Bengaluru, India, who left the deepest imprint. “They taught me that precision is important—but passion is everything,” he reflects. That lesson remains the backbone of his craft.


Signature Flavours of the Caribbean

Guests dining at O2’s fine dining restaurant Oro will soon encounter Chef Tanmoy’s signature creation: Aburi Flying Fish—flame-grilled Bajan flying fish paired with creamy polenta, chargrilled okra, tomato avocado buljol, and a delicate coconut nage. It’s a dish that celebrates the island’s heritage while introducing refined global techniques, a perfect reflection of our culinary vision.

Beyond this dish, his menus across the resort's eateries highlight the very best of local produce, whether as part of a Bajan traditional dish, or an international favourite. By sourcing fresh, seasonal, and sustainable ingredients, he ensures that every bite carries both flavour and meaning.

Chef Tanmoy’s style is best described as refined yet grounded—globally inspired with local roots—where innovation meets comfort. Influenced by his travels, his upbringing, and the cultural traditions of Barbados, each menu feels both personal and universal.

Whether experimenting with fermentation and pickling, or layering the umami depth of miso into unexpected dishes, he believes in respecting local ingredients while drawing from techniques honed across the world. Guests can expect subtle surprises, familiar flavours elevated, and a dining journey that feels truly immersive.

As for current culinary trends, he’s refreshingly candid. Faux meats? Overhyped. “Even many vegan guests don’t connect with them,” he notes. Instead, he prefers food that feels honest—like dining in a chef-owned restaurant with a handwritten menu, where passion shines through every dish.

December and January are his favourite months in the kitchen—when the festive season sparks creativity, and challenges his team to craft experiences as memorable as the celebrations themselves. Menu development begins with inspiration, sometimes from an ingredient, sometimes from a memory. From there, sketches become tastings, tastings become refinements, and eventually, the plate tells its story.

For the future, our Executive Chef is focused on building consistency, nurturing his team, and strengthening ties with local farmers and small producers. By promoting a farm-to-fork approach, O2 Beach Club & Spa continues to champion sustainability while offering guests a dining experience that is both authentic and unforgettable.

With the launch of the new Winter menu at Oro, Chef Tanmoy is proud to present signature dishes that explore various cuisines from around the world, including Turkey, Greece, France, Korea, Thailand and Ghana, elevated, of course, by subtle Caribbean twists. The menu is already a hit with O2's guests, and has been described as a 'global explosion of flavours!'
